Buffalo Chicken Bites with Blue Cheese Dipping Sauce

Here's a healthy take on the devilishly spicy chicken that hails from upstate New York.

Ingredients

  • 3 whole chicken, breast, boneless, skinless
    6 ounces each, cut into 24 (1") cubes
  • 3 stalk(s) celery
    cut into 24 (1") pieces
  • 3 tablespoon vegetable oil spread, butter-flavored
  • 2 tablespoon red pepper sauce
    plus a dash
  • 1 teaspoon oil, canola
  • 1/4 teaspoon salt
  • 1 pinch pepper, black ground
  • 25 whole toothpicks, wooden
  • 2 tablespoon cheese, blue (crumbled)
  • 1/4 cup(s) sour cream, reduced-fat
  • 2 tablespoon mayonnaise, light
  • 1 teaspoon lemon
    juice fresh
  • 1 teaspoon vinegar, red wine

Instructions

    For Buffalo Chicken Bites: Cut chicken breasts and celery into 24 (1") pieces. Melt vegetable oil spread in a medium nonstick saucepan. Whisk in 2 tablespoons of pepper sauce and cook for 1 to 2 minutes, or until slightly thickened; set aside.

    Heat oil in a large nonstick skillet over medium-high heat. Season chicken with salt and pepper, add to pan, and cook, turning occasionally, until browned on all sides, about 6 minutes. Add margarine mixture to pan and gently toss chicken until well coated, 1 to 2 minutes.

    Remove chicken from pan and skewer each cube with a toothpick. Skewer 1 piece of celery at the base of each. Arrange on a platter and serve with dip. Each serving is 3 skewers.

    For the Blue Cheese Dipping Sauce: Mash blue cheese in a medium bowl, leaving some small lumps Whisk in the sour cream, mayonnaise, lemon juice, vinegar, and a dash of pepper sauce to taste. Transfer to a small bowl and serve with the chicken.
