For tuna or chicken salad:

(2 tablespoons per serving)

4 teaspoons extra-virgin olive oil

2 cloves garlic, finely chopped
2 teaspoons chopped tarragon or basil
1/2 teaspoon black pepper

In a small bowl, whisk all the ingredients together and drizzle the dressing over tuna or chicken salad.

For steamed or grilled asparagus:

(2 tablespoons per serving)

1/2 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground pepper
1 teaspoon chopped rosemary, thyme, or chives

In a small bowl, whisk all the ingredients together and drizzle the dressing over the asparagus.

For shrimp salad:

3 tablespoons extra-virgin olive oil
3 tablespoons red-wine vinegar
2 tablespoons water
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh dill
