Kari was 211 pounds when she left for college. “I would eat whatever I wanted whenever I wanted, and it showed,” says Kari, who was extremely self-conscious about going off to university with her excess weight. Kari says she wanted to lose weight and made some small changes, but they didn’t help much. And she admits that, back then, she hardly ever worked out because she didn’t feel she was any good at it. Moreover, her weight made her unmotivated to try harder.
However, things took a turn when Kari’s roommate, who was also having trouble dropping weight, suggested she join her on the South Beach Diet. “Once I saw the number on the scale keep going down, I was hooked,” says Kari. “I was happier. I had more energy. I felt more confident and I really felt comfortable in my own skin.”
Kari began drinking a minimum of 64 ounces of water a every day. She started getting more sleep, exercising regularly, and eating healthier meals and snacks in smaller portions. She also began paying attention to nutrition labels. “Now, at the grocery store, I don’t buy anything just because the front label says it’s good for me,” says Kari. “I absolutely have to be happy with the nutritional facts before I buy anything.”
Kari also made a breakthrough with her exercise regimen. Now, she boasts, she actually enjoys working out. “I love doing the elliptical machine and strength training. I have never been a runner, but after starting South Beach Diet I began running 4 miles a day, and it was easy for me!” Even when Kari had a leg injury, she didn’t give up on her commitment to exercise. She switched back to the elliptical machine. “I find the elliptical to be just as fun as running,” she says. Kari admits that she still has her “off” days, but she does her best to stick with her exercise routine and once she finishes her workout, she says she “feels so much better.”
One of Kari’s secrets to long-term success is strictly following the guidelines of Phase 3 during the week and then allowing herself to be more lenient with what she eats on the weekends. “This has proven to be the best solution to maintain my weight loss,” she explains. Snacking has also been a big help. She says that the midmorning and midafternoon snacks really help her get through her workdays.
Kari adds that she was genuinely surprised about how easy it was to lose weight on the South Beach Diet. “I lost more weight than I had initially planned to and it was a wonderful surprise to me.” Kari explains that the South Beach Diet gave her all the tools she needed to lose weight and keep it off: “Even with working out I can tell that being conscious of what I eat and how much I eat is the main factor of my weight loss and maintenance.”
Kari lost 67 pounds on the South Beach Diet. Aside from her successful weight loss, Kari says the biggest reward has been gaining her new knowledge about health and healthy living. “I really didn’t know much about the science behind healthy eating and exercising, but the South Beach Diet changed that for me.”
Kari now has confidence in her new body. She enjoys eating nutritious foods and working out.
