Artichoke Hearts with Curried Chickpeas and Shallots

Ingredients

  • 2 tablespoon oil, olive
  • 2 medium shallot(s)
    thinly chopped
  • 2 teaspoon curry powder
  • 15 ounce(s) beans, garbanzo (chickpeas)
    drained and rinsed
  • 1 tablespoon parsley, fresh
    finely chopped
  • 14 ounce(s) artichoke hearts
    drained and rinsed

Instructions

    Heat olive oil in a skillet. Once hot (but not smoking), sauté shallots until soft and translucent. Add curry and stir briefly.

    Drain and rinse chickpeas and add to the pan, stirring to mix in completely. Cook on medium for about 2-3 minutes. Remove from heat and toss with parsley and artichoke hearts. Serve.
