Black-Eyed Peas with Greens & Smoked Tofu

In the South, black-eyed peas and greens are traditionally eaten on New Year's Day to bring good luck and prosperity to the New Year. We like this stew anytime of year.


  • 2 teaspoon oil, canola
  • 1 large onion(s)
  • 16 ounce(s) peas, black-eyed, frozen
    (1 package)
  • 16 ounce(s) mustard greens, frozen
    (1 package) chopped, or spinach
  • 8 ounce(s) tofu, cubed, smoked
    seasoned, cut into 1/2-inch dice
  • 2 teaspoon hot sauce
    plus more to taste
  • 1 teaspoon salt
  • peppercorns, black
    freshly ground, to taste

    Heat oil in a 3-quart saucepan over medium heat. Add onion and cook, stirring occasionally, until well browned, about 10 minutes.

    Stir in peas, greens, tofu, 4 cups water, hot sauce, salt and pepper; bring to a boil over high heat. Reduce heat to low, cover and cook until greens and peas are tender, about 25 minutes. Adjust seasoning with salt, pepper and hot sauce, if desired. Serve immediately.

  • Each serving is 1 1/3 cup.
