Chicken Sausage with Roasted-Garlic Mustard

Roasting garlic gives it a rich caramel-like flavor. Mashed and stirred into mustard, it’s a powerful match for flavorful chicken sausages. Look for lean sausages in the flavor of your choice.


  • 7 clove(s) garlic
  • 1 sheet(s) aluminum foil
  • 1 teaspoon oil, olive, extra-virgin
  • 1 pounds sausage, chicken
  • 3 tablespoon mustard, whole-grain
    plus 1 teaspoon
  • 40 whole toothpicks, wooden

    Heat oven to 350°F. Place garlic on a sheet of foil and drizzle with 3/4 teaspoon of the oil; wrap loosely and seal packet. Place packet on a baking sheet and bake until garlic is softened, about 30 minutes. Open packet, let garlic cool, then peel.

    While garlic is baking, heat a large nonstick or cast-iron skillet over medium-high heat. Brush with remaining 1/4 teaspoon oil, add sausages, cover, and cook, turning often, until browned on all sides and cooked through, about 15 minutes. Transfer to a cutting board, cool slightly, and cut into 40 (1/2") pieces.

    Place garlic in a small bowl and mash with a fork. Add mustard and mash until well combined. Lay sausage pieces on a flat surface, spoon 1/8 to 1/4 teaspoon mustard mixture onto each piece. Skewer each piece with a toothpick and serve warm.
