The tasty skin of sweet potatoes offers abundant fiber, and the flesh supplies a hearty dose of vitamins B6 and C, as well as potassium and iron. Remember that cider is drizzled on for flavor here; save drinking a full glass of cider for Phase 3.


  • 6 medium potato(es), sweet
    (about 3 pounds) each sliced into 8 wedges
  • 1 tablespoon oil, olive, extra-virgin
  • 1/2 teaspoon cinnamon, ground
  • 1/2 teaspoon salt
  • 1/4 teaspoon peppercorns, black
    freshly ground
  • 1/3 cup(s) apple cider, unsweetened

    Heat oven to 400ºF. Toss together potato slices, oil, cinnamon, salt, and pepper in a large bowl.
