Look for dried Bing cherries, which are naturally sweet, and avoid dried tart cherries, which always have added sugar. Enjoy a scone with some sugar-free jam or a wedge of light spreadable cheese and a glass of fat-free or 1% milk for a healthy breakfast.

Ingredients

  • 1/2 cup(s) flour, almond
  • 1/2 cup(s) flour, coconut
  • 2 tablespoon sweetener, monk fruit, no-calorie, baking formula
  • 1 tablespoon baking powder, gluten-free
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon salt
  • 1/2 cup(s) milk, fat-free
  • 1 large egg(s)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice, fresh
  • 1/2 cup(s) cherries, dried
    chopped, gluten-free all-natural, no-sugar-added

    Make Ahead: The scones can be baked ahead and frozen for up to 3 months. To freeze, arrange on a small baking sheet and freeze solid, then transfer to a freezer container. Reheat in a microwave (30 to 45 seconds) or in a toaster oven (no need to thaw).

    Preheat the oven to 400°F. Line a baking sheet with foil (for easier cleanup) and lightly spray with olive oil.

    In a large bowl, whisk together the oat flour, almond flour, coconut flour, monk fruit sweetener, baking powder, cinnamon, and salt.

    In a separate bowl, whisk together the milk, egg, vanilla, and lemon juice. Stir the wet ingredients into the dry ingredients and mix until well combined. Fold in the dried cherries.

    Divide the dough into 8 balls and place on the baking sheet. With moistened hands, flatten and shape the dough into 8 triangles, 11 ⁄2 to 2 inches thick. Make sure the triangles are at least 2 inches apart.

    Bake until lightly golden and a toothpick inserted in the center of a scone comes out clean, 15 to 20 minutes. Let cool on the pan.
