Cranberry Lime Granita

Cool, refreshing, and beautiful to look at, this treat is a great alternative to cakes and pies. Serve in martini glasses, garnished with strips of lime peel.


  • 12 ounce(s) cranberries, frozen
  • 1 cup(s) sugar substitute
    plus 2 tablespoons
  • 1 tablespoon lime(s)

    Combine cranberries, sugar substitute, and 4 cups water in medium heavy saucepan over high heat. Bring to a boil, stirring occasionally. Reduce heat to medium; simmer 10 minutes or until the cranberries burst.

    Meanwhile, place a wire sieve over a medium bowl. Drain contents of pan into sieve, pressing down on berries to release their juices. Discard berries in sieve. Stir lime juice into cranberry liquid. Refrigerate uncovered for at least 2 hours.

    Meanwhile, place a 13" by 9" baking pan in the freezer to chill. Pour cold cranberry liquid into the chilled pan. Place pan in freezer for 1 hour. The mixture will freeze around the edges. Remove pan from freezer and, using a metal spoon, stir to pull the frozen bits to the middle of the pan.

    Freeze for 30 minutes; repeat the stirring. Freeze again, until the mixture reaches a slushy consistency. Total freezing time will be about 3 hours, depending on the temperature of your freezer. Spoon mixture into glasses; garnish with lime peel, if desired. Serve immediately.
