Ginger Beef and Edamame Stir-Fry

A superflavorful stir-fry is a fast and tasty dinner solution on a busy weeknight. Cutting the round steak thinly across the grain makes it more tender. Here we use orange bell pepper, but you can use any color pepper you like.


  • 1 1/2 pounds beef, boneless round steak
    well trimmed
  • 2 teaspoon oil, dark sesame
  • 3 clove(s) garlic
    large, minced
  • 2 tablespoon ginger, fresh
  • 2 tablespoon soy sauce, less sodium
  • 1 teaspoon cornstarch
  • 1 cup(s) edamame, shelled, frozen
  • 1/2 cup(s) pepper(s), orange, bell
    thinly sliced
  • 2 medium scallion(s) (green onions)
    thinly sliced

    Slice the beef across the grain into 1/4" thick slices.

    In a large nonstick skillet or wok, heat the sesame oil over high heat until almost smoking. Add the garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add the beef and cook, stirring occasionally, until lightly browned, about 5 minutes.

    Meanwhile, in a small bowl, combine the soy sauce, cornstarch, and 3 tablespoons water.

    Add the edamame, bell pepper, and scallions to the beef mixture. Cook, stirring, until heated through, about 1 minute. Add the soy sauce mixture and cook until the sauce thickens, about 2 minutes. Divide evenly among 4 plates and serve hot.
