Grapefruit-and-Avocado Salad

An unexpected pairing, juicy grapefruit and creamy avocado create a lovely and very refreshing salad.

Ingredients

  • 2 teaspoon nuts, pistachios, unsalted, shelled
  • 1 small grapefruit
    red or pink
  • 1 medium avocado
  • 2 teaspoon oil, olive, extra-virgin
  • 1/2 teaspoon vinegar, red wine
  • 1 pinch salt, sea
  • peppercorns, black
    freshly ground, to taste

    MAKE-AHEAD: Nuts can be toasted up to 3 days ahead and kept refrigerated or at room temperature in an airtight container. Grapefruit can be segmented up to 12 hours ahead and refrigerated in a covered container.

    Heat oven to 275°F. Spread nuts on a baking sheet and toast until fragrant and lightly golden, about 8 minutes. Transfer to a plate to cool slightly, then chop finely.

    While nuts are toasting, segment grapefruit: Using a sharp paring knife, cut the ends off the top and bottom of the fruit, then cut off the peel. Holding grapefruit over a bowl to catch the juice, carefully cut along the membrane on both sides of each grapefruit segment. Allow the freed segments to fall into the bowl. Squeeze the remaining membrane over the bowl to extract additional juice.

    Just before serving, halve avocado and remove pit and peel. Cut each avocado half into thin slices and fan slices on 2 salad plates. Reserving grapefruit juice, arrange half of the grapefruit segments decoratively around the avocado.

    Whisk together oil, vinegar, and 1 teaspoon of the grapefruit juice in a small bowl. Drizzle half of the dressing over each salad. Sprinkle each salad with pistachios and salt. Season with pepper to taste and serve.

Look for fleur de sel, a flavorful French sea salt, in gourmet shops. Or, you can lightly grind larger sea-salt crystals for the perfect accent.
