Japanese Turkey-Soba Soup

This satisfying soup lends itself to a number of variations. Instead of turkey, you could use 8 ounces baked tofu, cooked chicken breast, cooked chopped shrimp, or cooked pork loin. To save time, prep the bell pepper and turkey while the broth is coming to a boil.

Ingredients

  • 5 cup(s) broth, chicken, less sodium
  • 2 teaspoon soy sauce, less sodium
  • 1 clove(s) garlic
    minced
  • 1 tablespoon ginger, fresh
    peeled and slivered
  • 6 ounce(s) soba noodles, 100% whole-grain, dried
  • 1 small pepper(s), red, bell
    finely slivered
  • 8 ounce(s) turkey breast, roasted, sliced
    slivered
  • 2 cup(s) spinach, baby
    (2 ounces)
  • 1 teaspoon oil, dark sesame

Instructions

    In a medium saucepan, bring the broth, soy sauce, garlic, and ginger to a boil over high heat. Add the soba and cook for the amount of time indicated in the package directions. Add the bell pepper for the last 2 minutes of cooking.

    Remove the pan from the heat. Add the turkey and spinach. Push the spinach down into the broth and let sit for 30 seconds to wilt the spinach and heat the turkey through.

    Stir in the sesame oil and serve hot.

  • Each serving is 1-3/4 cups.
