This tangy, spiced slaw makes a great salad or side for chicken, steak, or fish. Carrots are packed with fiber, iron, and the potent antioxidant beta-carotene. Use a food processor to shred veggies fast.

Ingredients

  • 1/2 cup(s) mayonnaise
  • 1 medium lemon
    juiced (use 2 tablespoons)
  • 2 medium scallion(s) (green onions)
    thinly sliced
  • 2 teaspoon sugar substitute
  • 1 teaspoon cumin, ground
  • 1 head(s) cabbage, green
    (1- to 1 1/2-pound), shredded (4 to 5 cups)
  • 3 medium carrot(s)
    shredded
  • salt
    to taste
  • peppercorns, black
    freshly ground, to taste

Instructions

    Whisk together mayonnaise, lemon juice, scallions, sugar substitute, and cumin in a large mixing bowl. Add cabbage and carrots and toss to combine. Season to taste with salt and pepper and refrigerate until ready to serve.

  • Each serving is 3/4 cup.
