Pork Kebabs with Scallion-Chili Paste

Ground fresh chili paste, also sold as “garlic chili paste,” is the secret ingredient that perks up this tender pork loin dish. You can also try chili paste in burgers, stir-fries, homemade mayonnaise or other sauces — and even on scrambled eggs!

Ingredients

  • 6 medium scallion(s) (green onions)
    roughly chopped
  • 1/2 cup(s) cilantro, fresh
    leaves
  • 1 tablespoon vinegar, rice
  • 2 teaspoon fish sauce
  • 1 teaspoon chili paste, Oriental
    (from a jar)
  • 1 1/2 pounds pork, top loin
    cut into 1" cubes
  • 2 medium zucchini
    cut into 1" thick rounds
  • 2 clove(s) garlic
    minced
  • 1 teaspoon oil, canola
  • 8 whole skewer(s), wooden
    (12")
  • 1 spray(s) cooking spray
    to lightly coat grill or grill pan
  • salt
    to taste
  • pepper, black ground
    to taste

Instructions

    In a food processor, combine scallions and cilantro; pulse until finely chopped.

    Add vinegar, fish sauce, and chili paste; process until a rough paste forms, about 30 seconds. Transfer scallion-chili paste to a medium bowl, add pork, and turn to coat well.

    In another medium bowl, toss zucchini with garlic and oil. Thread pork and zucchini evenly onto skewers, alternating pieces.

    Lightly coat a grill or grill pan with cooking spray and heat to medium-high. Grill kebabs, turning frequently, until pork is just cooked through, 10 to 12 minutes. Season lightly with salt and pepper and serve.

  • Each serving is 2 skewers.
