A grainy-mustard dressing makes an unlikely yet perfect pairing for the sweet and creamy flavors of the apple and the avocado in this delicious salad.


  • 2 tablespoon oil, olive, extra-virgin
  • 1 medium lemon
    juiced (use 2 teaspoons)
  • 1/2 teaspoon mustard, coarse-grain
  • 1 pinch salt
    plus more to taste
  • 1 pinch peppercorns, black
    freshly ground, plus more to taste
  • 1 pounds lettuce, red leaf
    torn into bite-size pieces (8 cups)
  • 1 medium avocado
    pitted, peeled, and thinly sliced
  • 1/2 medium apple(s), Granny Smith
    thinly sliced

    Combine oil, lemon juice, and mustard in a jar. Add a pinch of salt and pepper, close tightly, and shake vigorously to combine.

    Toss dressing with lettuce; add salt and pepper to taste. Distribute salad among plates, top with avocado and apple slices, and serve.
