  • 2 cup(s) beans, garbanzo (chickpeas)
    drained and rinsed
  • 1 1/2 teaspoon oil, olive, extra-virgin
  • 1/2 teaspoon cumin, ground
  • 1/2 teaspoon coriander, ground
  • 1/4 teaspoon pepper, red ground
  • 1/4 teaspoon pepper, black ground

    Preheat the oven to 400 F. Coat a no-stick baking sheet with no-stick spray and set aside.

    In a small bowl, toss the chick-peas with the oil, cumin, coriander, red pepper and black pepper.

    Place the chick-peas in a single layer on the prepared baking sheet. Bake for 30 to 40 minutes, or until crisp and golden.

VARIATIONS: Southwestern Roasted Chick-Peas: Replace the coriander with chili powder. Cajun Roasted Chick-Peas: Replace the cumin, coriander, red pepper, and black pepper with 1 teaspoon Cajun-style spice blend.
