Strawberry-Apple Breakfast Fool

We’ve given this popular British dessert a major health revamp. Instead of the traditional whipped cream and sugary fruit purée combination, we use high-protein Greek yogurt and a quick fiber-rich homemade applesauce blended with sweet strawberries. If using frozen strawberries, thaw them in a bowl so you don’t lose any of the juices.

Ingredients

  • 2 medium apple(s)
    (your favorite variety), peeled and thinly sliced
  • 10 medium strawberries
    (fresh or thawed frozen), thinly sliced; plus 4 small berries for garnish (optional)
  • 2 tablespoon agave syrup
  • 1/2 teaspoon vanilla extract
  • 3 cup(s) yogurt, fat-free, Greek-style, plain

    Make Ahead: You can make the fruit purée up to 3 days ahead and refrigerate. Don’t mix the yogurt and fruit until just before serving.

    For the fruit puree: In a 1- or 2-quart microwave-safe bowl, combine the apples and 1 tablespoon water.

    Cover with a plate and microwave on high for 5 minutes. Add the strawberries, cover, and let stand for 5 minutes.

    With an immersion blender (or in a standard blender), process the mixture to a puree (leave it a little chunky if you like). Let cool to room temperature.

    Stir the agave nectar and vanilla into the yogurt. For each serving, spoon 3⁄4 cup of the yogurt mixture into a small bowl or goblet, then swirl 1 ⁄2 cup of the strawberry apple puree into the yogurt. Garnish with a small berry (if using).
