  • 3 ounce(s) fish, tuna, light, packed in water
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard, Dijon
  • 1 tablespoon celery
  • 1 tablespoon scallion(s) (green onions)
  • salt
    to taste
  • pepper, black ground
    to taste
  • 1 large tomato(es)
  • 1 cup(s) lettuce, mixed greens
  • 1 teaspoon oil, olive

    Drain tuna fish and mix with mayonnaise, mustard, celery, scallions, salt and pepper. Remove top of tomato and hollow out as much as desired, as you would a pumpkin.

    Scoop tuna salad into tomato and top with minced tops of green onions or celery leaves. Serve with mixed greens tossed with salt, pepper and oil.
