About the Fresh Start to Weight Loss Challenge
What does the month of September represent for you? Maybe it signifies the beginning of the fall season, when many embrace the crisp, cool weather and enjoy watching the leaves change color. Or maybe it marks the start of the school year, which means getting organized and back into a routine again — not to mention a busy schedule! Whatever September signifies for you, there’s no better time than now to set new weight-loss goals and reaffirm your commitment to improving your health and overall well-being. The good news is it doesn’t have to be difficult — with a little organization, forethought, and creativity, you’ll find fun and exciting ways to stick to a healthy eating plan. And we’re here to help! Whether you’re new to the Beach or are looking to restrategize your weight-loss goals, our Fresh Start to Weight Loss Challenge will keep you inspired and motivated along the way. This 6-week Challenge will encourage you to think outside your regular recipe repertoire and expand your cooking skills as well as inspire you to try different forms of exercise. We’re very excited to kick off our annual Fresh Start to Weight Loss Challenge and look forward to taking this exciting journey with you! How to participate: Each Monday for the next 6 weeks, you will be given a mini-challenge or task to accomplish. They are meant to help you become more creative with your meals, cooking techniques, and activities on your way to reaching your goals. Simply post to this folder and tell us about your progress on the weekly assignments. Our Community Moderators, Message Board Volunteers, and Registered Dietitians may periodically weigh in on the assignments to answer any questions you may have. We encourage you to post as often as you can and feel free to add photos of your recipes in our weekly Challenge threads to be eligible to win. Winners will be chosen based on the quality and quantity of their posts when the Challenge begins on Monday, September 6, through its conclusion on Monday, October 18.
Three grand-prize winners will be invited to join us for an exclusive, private teleconference with Dr. Arthur Agatston! The winners will also receive a free month on the site and a library of South Beach Diet books.
Each week, one participant, who we feel best fulfilled the week’s mini-challenge, will win a copy of the The South Beach Diet Supercharged or a cookbook of your choice. We look forward to hearing about your progress and exciting new experiences!

Cheesy Spinach
1 serving
1 cup prewashed baby spinach
1 slice low fat American cheese
1 teaspoon trans-free margarine
dash of salt
dash of hot sauce (optional)
1 chopped boiled egg (optional)
Instructions:
Place spinach in a microwave-safe bowl and cover with waxed paper. Microwave 3 minutes. Add cheese, margarine, salt, and hot sauce (optional) to spinach. Cover with waxed paper. Microwave 1 minute or until cheese is bubbly. Remove from microwave and add chopped egg if you choose to use.

zucchini, sweet onion,red bell pepper,baby portabella mushrooms (whole).Cleaned and cut up into bite-sized pieces. Mixed in large bowl with "drizzle" of olive oil,salt and pepper,garlic powder, and Italian herbs. Spread out on 15x11 pan. Popped into 350 oven with Salsbury Steaks that were about 1/2 baked. Checked in about15 minutes and turned veggies over and mixed them up a bit.Back into oven for approx. 15 more minutes. Product was great! We all loved it. And much less attention required ( in contrast to stir-fry). Will definitely use this method more in the future.
