I miss the challenge this week too! What kind of burgers did you create? I made my mini-pizzas again this week. Having a few slices for lunch right now actually. YUMMY!
We have been beachy this week, but not particularly creative. YES, I miss the challenge, can't wait to begin the Summer Shake-up. I HAVE finally added excersize into my new lifestyle plan. The kids and I have started going for a ride on our peddle-bikes (mine is a single-speed trifecta tricycle - i love it!) every evening around 6:30. They are sleeping better because of it! So far, our shortest ride was 2 miles and our longest one, something under 3. Hey, it feels GREAT! We can't work the ride in on Wednesdays because of scouts and activity group that afternoon each week, but we did it last Friday, Sunday, Monday, and yesterday! I am really enjoying it. I've made a promise to myself that we will go at least 2 miles, a minimum of 4 times each week. We're going to mix it up a bit, sometimes take bikes, sometimes walk, my daughter wants to skate. Might let her do that while I experiment with alternating walking with jogging to keep up with her! :)
OH! I did try one new thing we have never had before! I picked up a bag of Black Matpe Beans from a middle eastern market I have been shopping at each payday for spices and hummus. These beans are black and teensy... like, not that much bigger than a wheat berry! I made bean soup the other night and decided to soak a cup or so of these and include them. YUMMY! Husband liked them too and asked that I make them by themselves, so I sprouted some. OH! They are really good sprouted! And I am soaking some tonight and going to cook them up and serve them with our porkchop dinner tomorrow.
Will let ya know how they are received! :)
