This is not only a family favorite, it has become a party favorite.
Grilled Salmon Salad
Squeeze fresh lemon on salmon. Sprinkle lemon pepper and rosemary on salmon. While my husband grills the salmon (just until it flakes), I wash and tear the lettuces and chop the onions, pepper and tomato. Tear a small amount of fresh broccoli into little pieces. Toss the lettuces, onions and bell pepper with with 3 Tablespoons of Newman's Low Fat Sesame Ginger salad dressing. Place lettuce on a platter. Arrange the salmon, chopped tomatoes and black beans on top.
- 2 pieces of salmon (nice thick cut about 2" wide)
- Lemon Pepper
- 2 slices fresh lemon
- 3 spring of rosemary (chopped medium fine)
- 1 small heart of romaine lettuce (torn into small pieces)
- 1 small bunch of arugula (torn into small pieces)
- 3 small spring onions (chopped medium)
- 1 small bell pepper (sliced into medium slices)
- 6 very small pieces of fresh broccoli (broken into very small pieces)
- 1 small tomato (chopped medium)
- 2 tablespoons black beans
- 3 tablespoons Newman's low fat sesame ginger salad dressing

I even saved half of my salmon for scrambled eggs tomorrow morning. I'm trying to feel ok about not cleaning my plate. I was taught that eating lots and cleaning your plate made you a good girl when I was small (alas). I hope you all enjoy this as much as my husband and I do.
