I tried this baked cod recipe this week. It was quick, totally filling and delicious. I'm sorry, I did not take a picture.
Place fish fillet in iron skillet sprayed lightly with pam. Place sliced onions on top of fish. Mix tomatoes, garlic and roasted peppers and place on top of fish. Sprinkle with Greek seasoning. Salt and pepper to taste. Bake in a preheated 400 degree oven until fish just flakes. Enjoy! My husband loved this dish.

- 1 medium size cod fillet
- 1 can of sun roasted tomatoes
- 1/2 medium onion sliced into thin slices
- 1 cloves of garlic, chopped fine
- 2 roasted pablano peppers
- Cavenders Greek seasoning
