Week 1: Your Challenge -- Pack a Healthy Picnic

Summer is a great way to enjoy warm-weather dining. Instead of having your meal indoors, why not plan a healthy picnic with family and friends outdoors? From crunchy vegetables and juicy fruits to reduced-fat cheese, lean sandwich meats, chilled soups, summery salads, and whole-grain breads and wraps, it’s easy to pack a South Beach Diet-friendly picnic. Be sure to wash all fresh fruits and vegetables thoroughly and pack them well in plastic bags and iced coolers. Choose lean cuts of deli meat, such as fat-free or low-fat ham, turkey, or chicken breast, lean roast beef, or smoked ham. If you’re on Phase 1, skip the sandwich bread and serve cold cuts on a salad or in lettuce leaves for a roll-up; on Phase 2 and 3, enjoy them in sandwiches made with whole-wheat or whole-grain bread.

This Week: Pack a South Beach Diet-friendly picnic and enjoy it outdoors (whether you venture to the beach or park, or even in your own backyard!). Let us know what kind of meals you prepared. What a wonderful Challenge!  I have a deck begging for a nice picnic at the hottub!  Mind is a working on this one!

Ha ha, sounds easy enough. But, Richard (and whoever else is behind this idea) you probably don't live south of the Mason-Dixon. I spent an hour outside yesterday and practically passed out. A picnic in this sticky, humid, near 100-degree heat is NOT a healthy way to enjoy any meal. 

 So I'm going to take the challenge and spread my checkered cloth inside. I'll still pack a healthy picnic, and I'll enjoy the trees and sky, but it will have to be through the window! LOL.

Nice idea but unless you can tell me how to ward off the mesquitos and yellow flies, my picnic will be on the dining room table!  Have to get my porches screened in!  We just moved to the panhandle of Florida and we haven't gotten around to it yet!

Ooo!  OOO!  What a GREAT first challenge and perfect timing, too.  Tomorrow night is the monthly Terrific Tuesday at my little town's own museum of South Jordan history!  For this month's activity, Sacajawea will be there to tell the kids all about her adventures with Lewis & Clark and make a craft they can take home!

The kids and I had already planned to ride our bikes to the event tomorrow night - a 2-mile ride.  We have been riding together almost every night... between 2 and 3 miles... for over a week now and I am LOVIN' it as much as they do!  So I will prepare our South Beach picnic feast and we will go an hour early so we can set up and have our dinner on one of the picnic tables outside the museum.  HOW FUN!

Will report on the fun tomorrow night!  :)

SOUNDS LIKE YOU YOUR FAMILY ARE HAVING A GOOD TIME. I DREAM OF BEING ABLE TO BIKE AGAIN.. I GUESS IT IS COOL WHERE YOU LIVE, DOWN HERE THE ONLY BIKING THAT GETS DONE IS IN THE GYM. IT HAS NBEEN IN THE 90'S AND HUMDITY HAS BEENIN THE 90'S TOO.

Excellent Challenge! I am in phase 1, so I am going to have to explore food & recipes to come up with a great picnic dessert. Fun fun fun

It's shouldn't hit 90 by the weekend, but even if it does it is a dry desert 90's.  I just LOVE the desert in summer!  :)

Heidi that sounds like a wonderful evening! I wish I could come along (don't you love how I just invite myself on your family outing). Your town sounds like something out of a quaint movie. Can't wait to see pics.

It's been so hot here as well. Tomorrow and Thursday it's going to be 98 degrees. However, I am still planning on a nice bike trip and picnic on Sunday with the hubby. I don't care how hot it is! I'm thinking of whipping up some summer gazpacho to bring along. Maybe some grilled shrimps too.

I love the idea of date night with kids....you have given me the idea to do it with my son tomorrow night after his basketball practice and the park adjacent to it. I recently was out of town and I missed him so much. Let me start planning menu....have a nice ride and picnic

Ha!  Exactly what I've been thinking!  Even a picnic breakfast would be too hot - it's just nasty and miserable outside.

So we also will be picnic-ing with the AC blasting, and dreaming that we're in Vermont or something! :-)

Awesome idea! I think I will plan my picnic around our outing this Saturday to the Balloon Festival. In that carnival setting there aren't ANY SB friendly foods, so I'll pack up our cooler and have a meal I certainly can enjoy. So much fun watching 30+ hot air balloon launch and sail through the sky!

Great timing for the first week of the Summer Shake-Up Challenge, my husband I and were invited to join our friends for a boat ride on the lake this Friday evening.  I offered to bring dinner for all of us, my friend happily agreed to my offer.  This works out well for me, as I will control of the menu, I will keep it SB friendly and it is a nice way to say thank you for treating us to the boat ride.  Am still working on the menu, will post it as soon as I have it completed!!!

I checked out the dessers for phase 1 - not a whole lot to pick from.I think sugar free jello in the to go cups would actually be prefect to pack. I guess I'm wokring backwards on my menu

This assignment is truly a challenge for this week.  I will have to do some investigating into Phase I recipes and ideas.  I have restarted SBD again after being gone from the beach for almost a year.  I attempted to try to get back on the beach during the holiday challenge.  I was doing all right, but became impatient with the slower weight loss this time.  I did not realize at the time that I was losing and I should have remained patient and plodded on, but gave into the stress, emotional eating monster and now I have gained additional weight that I will have to deal with also.  But I am back and so happy to be on my second day.  Now, to ponder this healthy picnic.  Should not be so hard, but like many others here on the beach, the weather is really not so picnic friendly.  I guess I will plan around a late dinner picnic when it is cooler.  This could be an excellent twist on the whole picnic theme.  To be continued.....

All of you gals looking for a Phase I dessert, I have a perfect one. I made this for Super Bowl Sunday back when I was on Phase I. It's divine!

Heavenly Lemon Mousse
6 Servings

Description: Making mousse is not hard, but you do have to watch the mixture carefully as it cooks, since it thickens quickly. Phase 2 and 3 diners can top with fresh seasonal berries.  

Ingredients
6 egg yolks
2 whole eggs
3/4 cup Splenda or sugar substitute
1 tablespoon lemon peel (from 1 large lemon)
1/2 cup fresh lemon juice (from 2 lemons)
1 1/2 cup South Beach Diet-approved whipped topping

Instructions:
In medium stainless steel saucepan over medium heat, combine yolks, whole eggs, Splenda, peel, and juice. Cook 4 minutes, whisking constantly, until thickened to a custard consistency. Remove from heat; pour into medium bowl and refrigerate until cold (about 30 minutes). Just before serving, fold in whipped topping until combined and lightened. Spoon into serving bowls.

Nutritional Information:
136 calories
8 total fat (4 g sat)
275 mg cholesterol
10 g carbohydrate
5 g protein

An afterthought here - this would be good using any citrus really. Lime, oranges - grapefuit even! I think I might add this to my menu, key lime might be an appropriate end to gazpacho and grilled shrimp.

Already planning what, where and how!  I am working most of the weekend and will be by myself.  So I think I will plan a picnic out in the yard and invite my neighbor.  Now what to make.  I am in phase 1 and will try and get creative.
