Week 4: Your Challenge -- Season With Summer Herbs
Fantastic flavor enhancers for healthy summer dishes, herbs can be used in everything from soups and salads to seafood and steak dishes — and even desserts! Herbs are a great way to add flavor without fat to your favorite meals. Herbs, such as basil, Italian parsley, mint, dill, and tarragon are in season during the summer. Use fresh or dried herbs for cooked fish, chicken, and meat dishes, and for pasta and salad dressings. Fresh herbs also make useful and flavorful grilling “tools” as well; use sturdy rosemary sprigs as skewers for shrimp or scallops. Try fresh dill or fennel with whole trout, tying the herbs in place around the fish with kitchen twine. Or, tie a bouquet of fresh herbs together to make a handy brush to spread sauces or marinades onto foods as you grill.
This Week: From soups and salads, to seafood and steak dinners, enhance the flavors of your dishes using fresh or dried herbs. Make your own mix of herbs and spices for a delicious rub. Okay, this is a great challenge because I just LOVE pinching off fresh herbs to make things right out of the containers they are planted in.
I made a wonderful breading and then used it to coat a batch of chicken strips for supper. To make the breading, I tossed the following items into my food processor and gave it a whirl. It was wonderful! Husband and the twins loved it. Husband even said it was the "best meal so far and PLEASE make it again"! :) Daughter liked the flavor of the coating, but did not like the nutty texture oat groats gave it.

- Fresh-milled WW flour
- Whole oat groats
- garlic salt
- and several sprigs of Thai Basil from the garden



I am using a smoked chicken on the smoker. These are so SBD friendly and easy to prepare. I experiment using different seasonings on my chicken, but my favorite ones are parsley, onion powder, rosemary and thyme. I like to put a lot of fresh onions from the garden as a stuffing for the chicken and then I rub salt and pepper all over the chicken, sprinkle parsley, onion powder on the onion mixture. On the outside skin of the chicken I like to sprinkle the rosemary, some more parsley, and the thyme. Just put on the smoker an let the aromas fill the air around your home. I can guarantee the neighbors will be peeking around trying to find out what that awesone aroma is coming from your yard.
I have some varigated thyme growing in my herb garden. I've always grown it because it's beautiful as a plant. Now I'm keen on the idea of coming up with a recipe using it! THanks for the push to use my own garden!

Yesterday I made a Taco Salad, sans taco.
Romaine Lettuce
Tomatoe
Olives
Green Onions
Cucumber
Sunflower Seeds
and fresh cilantro!
I used some low carb spritzer ranch for dressing.
I just had tuna on the side, but I'm sure you could use low fat ground turkey meat or pork or whatever you wanted and it would turn out really well.

I decided to try Richard's suggestion with dried herbs
The herb marinated sirloin with roasted asparagus and tomatoes.
The herbs highlighted dried marjoram and dried thyme. Excellent combination to a buffalo sirloin.
Press meat into the dried herbs, salt, garlic powder, and pepper. Let it marinate for 30 min. in plastic wrap. I cooked it on an electric grill let it rest while I roasted asparagus and grape tomatoes for 10 minute at 450 degrees F.

For a side I put together a No cook salad.......Greek Feta Salad

The amount of dill I bought probably could last me a month if it were to last that long! Loads of chopped fresh dill, kalamata olives, romaine lettuce, feta cheese crumbled, 1 tablespoon olive oil, lemon juice of one lemon, tomatoes, and cucumbers. I think fresh herbs go excellent with no cook meals and salads. The buffalo steak wanted the dried herbs. No need to fresh here!

This time, I'm making a Pork Roast. First, I trimmed all the fat from the roast and then put it in the crockpot with about 4 cups of chicken broth. For seasonings, I used just a bit of garlic with marjoram and nutmeg. It has been cooking for about 3 hours now on low. I just tossed in a generous handful of fresh dill sprig fronds and I plan to let it continue cooking until tomorrow's meal. By then, the pork should pull apart very easily. I believe I will serve it with brown or wild rice, black beans, and roasted beets from my neighbor's garden. Can't wait!


Since I'm off from work this week I decided it would be a good time to learn something new. Yesterday we visited the Reading Terminal Market in Philly. I came across this great cookbook shop and picked up two fully illustrated cookbooks on Indian food. I thought, what a great week to try it out. Also located in the terminal was a spice shop. I picked up a bunch of spices and herbs for Indian cooking and I'll post my recipe and completed dish later this week. I haven't quite decided which dish to prepare but there is actually a lot of Indian food that will fit nicely into SBD. Here are a few pics of our trip. Check out all those spices!! It was overhwelming, but also exciting. Can't wait to get started.






I have grown an herb garden for a long time and love using fresh herbs as well as preserving them for the winter. I have green basil, sage, oregano, thyme, rosemary and parsley. I have grown especially fond of using them in homemade salad dressings! So much better, fresher and more flavorful than any store bought. I have made flavored vinegars and oils as well as combinations for seasoning. Homegrown dried herbs make great gifts for the cooks in your life as well.
I can't wait to see the results of your field trip for an Indian inspired dish. What a different idea!
And here is the result of my Herbed Roast Pork dinner. I decided on chopped broc instead of the beets <saw something abt them not being SB legal - oops> and made a side salad with the beet greens, 'maters, cukes, and black olives. The rice is brown rice and the gravy is made with a bit of cornstarch cooked into the fat-skimmed drippings.


Just wanted to let everybody know that I'm back. Sorry but, summer just caught up with me but, I have lost 18 lbs (a lb. a wk.) & have done each of the challenges. I just haven't been letting you know
I made a salmon p atty instead, of a hamburger, hope that counts.
The latest one, an outdoorr activity is walking in my pool to build up my leg muscles.
And, today i sauted scallops & mushrooms with dill, chives, garlic & onion.
So, I'm prepared for the next one.
