Week 6: Your Challenge -- Grill a Fruit or Vegetable Kebab

Grilling enhances the flavor of food and is a great way to take advantage of warm-weather dining. And with the abundance of fresh summer produce like zucchini, summer squash, tomatoes, peaches, apricots, and berries, you can prepare a delicious and nutritious grilled kebab. A healthier alternative to corn on the cob and watermelon, vegetable kebobs and when on Phase 2, fruit kebabs make your dining experience much more fun — plus they make excellent sides to many meat, chicken, or fish or seafood dishes. To keep things interesting, use cookie cutters to make shapes out of veggies and fruits. Season vegetable kebabs with different spices and herbs and pair them with your favorite entrée. For fruit kebabs, rub some granular sugar substitute for taste and melt some dark chocolate for a fondue.

This week: Grill a vegetable or fruit kebab for a healthy side dish or dessert. Check out our Mixed Seafood Kebabs With Parsley-Garlic Sauce (Phase 1) and Star Anise-Spiced Fruit Skewers for ideas. The gazpacho challenge was interesting to me, but I'm still not "big" on cold vegetable soup!  Looking forward to the kebab challenge, though!

Ladies and gentleman...the Milkmaid strikes again!  Nice job Heidi and very much deserved! You kicked major butt last week. Can't wait to see everyone's kabobs.


BeachVan: you can always heat up the gazpacho if you can't stand the chill. Then it would be like an all tomato Chili without the meat.  : )

I am spreading the good word with all of the duplicates I have received.  Now Daughter Maria will have a copy of the Summer cookbook along with the other I gave her.  And I gave the second duplicate of the Quick and Easy to a co-worker.  She LOVES it!

And I have MY library on a glass-doored shelve in my kitchen and refer to it almost every day.  OH!  And I'm even working out to the DVD now!  I just love this!  :)

Just love the challenge this week, I love grilled veggies, but have never made a Kebab. I will be looking foward to finding  a few new recipes this week!!!

I can hardly wait to see the kebab recipes!  I'm thinkin' Just has kind of a knac for the kebab, I'm pretty sure she's made a few for our other challenges.  My baby sister passed away with cancer a few years ago, but she used to love to grill shrimp, pineapple and veggie kebabs.  She marinated them in something very sinful I'm sure, but ooooo they always were very, very good!  Now whenever I think of kebabs or someone serves kebabs, I think of Pam.  Sweet memories, those are.

This will be a great challenge for collecting up lots of good recipes, I'm very sure!

Heidi thanks for sharing that little tid-bit about your sis. Pineapple and shrimp kebabs sound great, I'm thinking of some kind of coconut sauce. I don't think I can quite handle pineapple yet though - it's a phase 3 food I think right?

It's odd, but I am craving sauerkraut - how does turkey sausage with onion and apple sound. Chopped into chunks, grilled and served with a little kraut? I have to look at the ingredients for turkey kielbasa though. Not sure if there are bad things lurking. Either way, I'll figure it out.

Yes, Pineapple is definitely a phase 3 food (need I say that I learned that from BeachVan?), so ours should not include it.  I'm thinking about making a kebab though, like Pam's, with a phase 2 fruit in lieu of the pineapple.  What do you think would be a good substitute?  I was thinking maybe banana or plantains?  Or maybe jicama instead of a fruit... my family has really come to like raw jicama and I bet it would be great on the grill!

Mmmmm, sauerkraut.. I have always loved it!  Mother used to put just a bit of sugar in it to get us to eat it willingly, but I like it without the sugar best. HA!  I even did then, just never told her.   I wonder!  Mayhaps you could use a sauerkraut-based marinade for your kebab??????  YUMMY!

Hmmm. Bananas, not sure if I like the texture of the banana along with a shrimp. But who knows - I wasn't sure about the chilled cucumer soup and that turned out good. I've never used a plantain before. Something to try, can we have them on phase 2?

What if you used sweet potato? I made this great sweet potato salad a few weeks back. You boil the taters until they are just slightly tender but not cooked, then you cut them into chunks and grill them to carmalize. I think that would work with shrimp. If you cook the potatoes just right they'd get grilled at the same time as the shrimp. You could also skewer and grill some poblano pepper slices with it. (that was the other ingredient in the salad). Brush the skewers with some SF BBQ sauce or a little agave nectar and lime. YUM! I'm making myself hungry.

Fruit and shrimp though would be a good combo...what could you use in place of pineapple? Hmmm...what about MANGO.

Plantains are very similar to bananas.  The flesh is firmer, I think and maybe they aren't quite as sweet.  But I like your mango idea.  I was also thinking last night that chunks of white coconut flesh would be excellent with shrimp.  Is coconut a legal food?  Surely it is... better check the list.

OMG, Pineapple, plantains, raw coconut flesh, mango, sweet potato,...We are really making a summer kebab to remember!

This challenge has me looking at my lists too. For example I want to use fresh apricots in my kebab but a serving is 4 small. Is this right? It seems a little to much. I can always eat less than a serving but I am not the type. 

I had one last night and they are ready to be kebabed.

It does say 4 fresh apricots are a serving. I guess if you think about it the pit is almost half of an apricot so 4 of them really can't be more than 3/4 cup or less of actual fruit. Sounds right to me when I think of it that way.

I was hoping to post my kabob early this week but, hubby just informed me I can't go grocery shopping until payday. I'm going to shoot for Saturday evening then.

Does anyone feel  like we need to see some SBD desserts? I'd love to see a dessert kabob - anyone game? Chef, are your apricot kebabs going to be dessert or savory?

Thanks justme, I will be on look out for your "making me hungry" kebab come Saturday. I know how it is, shopping for food has become a really fun healthy activity but I spend alot, sometimes I have to slow down. The challenges keeps me focused also.

My added apricots to kebab will be savory but I hear ya, grilled dessert on stick is a great idea to close challenge.

Come on girls, any ideas?
