Since I noticed most of you attended Monday's meeting, you probably already weighed in for the week, but if you haven't attended to that little detail, don't forget to do so.

Also, remember to refresh your browser from time to time so that you can see the posts that are coming in.

I tried greek yogurt today and was not that impressed. How do you like to eat your Greek yogurt?

(that was part of my quest for different foods)

If I can't find them, I make them myself by taking a boneless chicken breast and slicing it in half horizontally, so that I have 2 thin "cutlets".  But most of the time I can find them in the grocery store.

I'm glad you enjoyed reading how to stay out of February food ruts! Thanks for the tip you shared on using the Quick and Easy Cookbook. It is a great way to find easy and creative ideas to keep meals fresh and interesting. Have a fun and adventuresome 'food' weekend!

re: chicken cutlets

Thanks! I never thought of butterflying them, then cut in half. See I learned something today! I never can find them.

Kindy, that is great advice.  I will consult those area and see how I can better adapt the left overs to the SB meal plan.  Thanks!

Yes, I've always hated February for this reason.

I've been trying a couple of new things this year.  Beside cooking, which I love to do anyway, I've added in more physical activity.  I even committed to training for a run we have here in Spokane in early May.  Also, luckily for me, Lent coincided with mid-February and this is my time for "renewal and inner-cleansing".  We have a soup supper at my church on Friday night (thankfully the deepfried fish fries of old have gone by the wayside!) and since we are meatless on Fridays, it's been a great boon to find a nice SBD friendly, non meat soup to take.  When looking for legal recipes it's sparked an interest in other dinner possibilities.

I tried Greek yogurt too.  Also was NOT impressed.  It is supposed to have more protein, but I found that it did not satify my snack hunger.

Hi Patina!  Glad to see you.  It is hard when circumstances set us back.

I like the popcorn too, but it doesn't always agree with me, so I seldom have it these days.  3 cups of fat free popcorn is a starch serving.  When I have it, I'll add some cinnamon and a sprinkle of splenda if I am wanting a sweet snack.  But my all time favorite is a spritz of ICBINButter spray and a sprinkle of grated aged parmesan.

Of course anything that has shaved or freshly grated aged parmesan is a winner in my book -- it's one of the few cheeses that I really love.

I'm not a big soup fan-I know I must be in the minority....but I still think that is a great way to try new food!

That's a great tip -- getting in some physical exercise during the February/March doldrums.  So... here's a "Best Tips" badge!

With all the snow and rain we have had, I've had to be innovative about how to get my exercise in.  I use my elliptical, of course, but sometimes I want to have something different.  I've been climbing stairs at work as I walk from one end of our two story building to another, I go up the stairs, down the first hallway, down the stairs, down another hallway, up the stairs -- etc.  It's a half mile from one end of the building to the other, and there are 7 different staircases.

Great way to rack up the miles while taking a break from the desk work.

Thanks.  That explains why I didn't see them. I rarely go to that section of the boards.

Good job on staying on the South Beach journey for the past two years, and for your weight-loss success! Popcorn may be reintroduced during Phase 2. The serving size is 3 cups popped and is in the starch/grain category. The best choices are those that are either air popped, cooked on the stove-top with canola oil as part of the daily fats/oils, or microwave popcorn that does not have any trans fats. For a 'sweet, crisp' snack, try some of the no-added-sugar dried fruit snacks, like banana chips or apple slices.

I like the thickness and the creaminess of the Greek style yogurt.  I don't like the price either, so I make my own by taking a large container of store brand fat free plain yogurt and dumping it into a strainer lined with 2 coffee filters.  I set it in the fridge over a bowl overnight.  Next morning, the whey has drained out and I have my own inexpensive Greek style yogurt.

I use it the way I'd use sour cream to make dips for my veggies.  I also love it blended in the blender with frozen peaches or berries -- you can add a little sweetener if you need it, but I like just the sweetness of the fruit.  It's like having soft-serve ice cream.

Isn't that the truth about parm.  Love it!

I use differen't seasonings. I like curry on my popcorn. But then again, I like curry on anything.

I've never been a big oatmeal fan... although I keep promising myself to give it a try again ... so many of my tastes have changed since I started eating healthfully!
