Jalapeno Chicken Salad

If you're looking for a jalapeno chicken recipe that's sure to satisfy you and please your lunch guests, look no further than this South Beach Diet™ spicy chicken breast salad. This classic Mexican salad, chock-full of roasted red peppers, and creamy mayo has been updated and upgraded to the winning class of nutritious, spicy salads on The South Beach Diet™. Grilled chicken breast is delicious in this special jalapeno recipe; the flavors complement as they do in most Mexican recipes. Serves 2

Ingredients
1/3 cup diced celery
1/4 cup finely chopped green onions
1/4 cup regular or low-fat mayonnaise
1 tablespoon dried parsley flakes
1 tablespoon fresh lemon juice
1 pickled jalapeno, seeded and chopped fine
1 (2-ounce) jar roasted red pepper, diced small
2 (6-ounce) packages grilled chicken strips, chopped
1 bag prewashed salad greens
salt and pepper to taste

Instructions
Combine the first seven ingredients in a bowl and mix well. Season to taste with salt and pepper. Stir in chicken; cover and chill. Add chicken mixture to salad greens.
