Ingredients
2 swordfish steaks (6 ounces)
1 teaspoons Smucker's ® Lite Sugar Free Orange Marmalade
1/2 large green onion, thinly sliced
1/2 teaspoon peeled fresh ginger, minced
1 tablespoon low-sodium soy sauce
1/2 garlic clove, minced
1`1/2 teaspoons dry sherry
Instructions
In 11 X 7 inch baking dish combine garlic, low sodium soy sauce, ginger and sherry. Place the swordfish steaks in the dish with the pointed ends at the center. Turn steaks over to coat. Cook covered with wax paper in microwave set to High for 6 minutes, until the swordfish becomes opaque throughout; flip the swordfish over and rearrange after 3 minutes. Allow to stand covered for 2 minutes. Stir the green onion with the orange marmalade into the cooking liquid; spoon liquid over the swordfish. Serve on 2 serving plates.
