Carne Asada (Phase 1)
Carne asada means “grilled meat” in Spanish and is also the name of one of Mexico’s most popular dishes. Purchase the fresh salsa from your supermarket. You can also try grilled scallions instead of red onion if you like.

Grilled Sesame Salmon (Phase 1)
This flavorful, heart-healthy dish cooks up quickly but looks impressive, making it a perfect meal for entertaining.

Grilled Ancho-Rubbed Flank Steak (Phase 1)
When fresh poblano chilies ripen and dry, they’re called anchos. You’ll find ground ones in a well-stocked supermarket, or you can buy them whole and grind them in a spice grinder. Serve this tangy, mildly spicy steak with your favorite salsa, or, in later Phases, use it to make fajitas with grilled vegetables and whole-wheat tortillas.

Big Easy Shrimp (Phase 1)
Here’s an easy way to get a taste of the Big Easy. Serve this traditional shrimp creole dish over brown rice to turn this into a Phase 2 dinner. If you like, you can substitute sea scallops for the shrimp.

Five-Spice Salmon (Phase 1)
Sometimes in life we want subtle, but other times we long to be overwhelmed. In the creation of five-spice powder, the Chinese gave us that chance. With fennel, cloves, cinnamon, star anise, and Szechuan peppercorns, we get to taste sour, bitter, sweet, pungent, and salty all at once. If you’ve never tried five-spice powder before, you might want to halve the amount, or your taste buds might just blow a fuse!

Beef With Asparagus and Mushrooms (Phase 1)
Wood-scented rosemary, nutty garlic, and zesty lemon give an otherwise ordinary steak and vegetable dish a touch of sophistication.

Penne With Eggplant and Ricotta (Phase 2)
Tossing hot pasta with ricotta cheese creates a quick, creamy sauce that's rich in taste and low in fat. Top this dish with fresh parsley or basil, if you have some on hand.

Chicken Puttanesca (Phase 2)
Sometimes making your own tomato sauce takes only minutes longer than warming a prepared sauce — yet the result is so much more delicious. This succulent meal of chicken, olive-caper tomato sauce, and pasta will satisfy the whole family.

Grilled Tuna With Teriyaki Glaze (Phase 2)
This tuna will make your mouth water. Grilled to absolute perfection and brushed with a sassy teriyaki-like glaze, this is a recipe that will satisfy the whole family.

Seared Scallops With Summer Vegetables (Phase 3)
Sweet and delicious, scallops sometimes come with a “foot” attached; this small, tough muscle pulls away easily and should be removed.
